Some yeasts do not consume maltose and maltotriose allowing for much lower attenuation of beer.

The Premise #

By using a yeast strain that does not consume maltose or maltotriose and modifying a recipe appropriately to balance the flavor, one could create a low alcohol beer without any specialized equipment.
